I need to know the time display for the various bread types just before the last rise starts. I always do the last rise in a conventional pan and bake the loaf in a conventional convection oven. Other companies include detailed timing of their various programs in the manuals.(ie mix,knead,rise and bake sequence times.I need to know when to take the dough out for the last rise in a conventional pan.
