I am considering having a Mistral 250mm Expressair...

I am considering having a Mistral 250mm Expressaire White Exhaust Fan installed in my kitchen ceiling. Can it be connected to a switch with variable speeds? If so, Would you recommend a switch with 2 or 3 speeds (like those used for ceiling fans) or a dimmer type?
